Proteins are sourced from our ranch partners and trimmed in-house. Sides are built around what’s at peak season on your date. We lock the final menu 2 to 3 weeks out once every ingredient is confirmed.
Step 3
Long smokes start overnight or early morning. Our team brings the food, sets up the buffet or carving stations, serves guests, and breaks everything down at the end. You enjoy your event without checking on the pitmaster.

Yes. BBQ weddings are one of our specialties: full-service, plated or family-style, with scratch sides and farm-sourced proteins. We run the event exactly like any other wedding catering job: chef, staff, service, breakdown.
We scale down to about 25 guests for full-service BBQ and can go much larger. We’ve served BBQ to 500+ at corporate summer events. For very small private gatherings, our or personal chef catering is a better fit.
For most events we smoke in our Corona kitchen where we have full pit equipment and overnight control. We finish and hold at temperature on-site, carving and serving in real time at your venue. For larger events with the right setup, we can smoke on-site when it adds to the guest experience.
Yes. Vegetarian, vegan, gluten-free, and allergy-sensitive menus are built into every BBQ catering plan. We’ll design dishes that work alongside the smoked proteins, not apologetic substitutes on a separate table.
